Sauerkraut was invented in China, long before the Germans perfected the fermented cabbage. The Chinese version is called suān cài (酸菜), which literally means sour vegetable. It's different depending on what part of China you are in. The south prefers to make it with mustard greens, the north like it with bai cai or napa cabbage (often called Chinese cabbage in western grocery stores), and in Sichuan - as I perused the market - I was told the local suan cai was made with qing cai, which basically means green vegetable. After a bowl of sauerkraut and beef noodles soup, I explored the market for large jars of pickled cabbage. After that, I met up with Sara to try the northern version of suan cai, the version that's more similar to the sauerkraut that I ate growing up. We went to a restaurant that specializes in food from the Northeastern part of China. Their menu had a ton of amazing looking dishes, but after much debate we decided to order pineapple and fried pork, scallions mixed with a soft tofu, and the main event - pork ribs and sauerkraut (made with the northern version of suan cai).
