Add the egg and stir until just combined. Do not overwork the dough. Wrap it in plastic wrap and let it chill in the refrigerator for at least 30 minutes. Grease a tart pan, about 9 inches (22 cm) in diameter. Roll out the dough and line the pan with it. Prick the bottom with a fork and let it rest for a few minutes before baking. Bake at 400°F (200°C) for about 10–15 minutes. Let the pastry shell cool slightly in the pan before carefully removing it. Filling: Whisk together the egg yolks and sugar in a saucepan. Scrape the seeds from the vanilla beans and add both the seeds and the pods to the egg mixture. Gradually add the milk and stir in the cornstarch (maizena) until fully dissolved. Heat the mixture over medium heat, stirring constantly, until it thickens to a custard-like consistency. Whip the cream until light and fluffy, then fold it into the cooled vanilla custard.
