Shrimp Rasta Pasta Ingredients (4 servings) 1 lb large shrimp, peeled & deveined 12 oz pasta (penne, linguine, or fettuccine) 2 Tbsp olive oil 1 medium onion, finely diced 1 red bell pepper, thinly sliced 1 yellow bell pepper, thinly sliced 3 cloves garlic, minced ½ tsp old bay seasoning ½ tsp garlic powder ½ tsp onion powder 1 Tbsp paprika tsp Sazon ½ tsp allspice 1 tsp fresh thyme 1Tbsp chopped parsley or cilantro 1 cup heavy cream ½ cup grated Parmesan cheese (or more to taste) 1–2 tsp jerk seasoning Salt & black pepper, to taste Instructions: 1. Cook Pasta Bring salted water and oil to a boil. Cook pasta al dente per box instructions, reserve ½ cup pasta water. 2. Marinate Shrimp Toss shrimp with old bay seasoning, garlic powder, onion powder, paprika, allspice, black pepper, jerk seasoning. Let sit 10–15 minutes. 3. Cook Shrimp Heat oil in a skillet over medium-high. Add shrimp, cook 2–3 minutes per side until pink. Remove and set aside. 4. Make the Sauce In the same pan, sauté onion and peppers until softened (5 minutes). Add garlic, cook 1 minute. Stir in heavy cream, sazon, allspice, thyme, parsley, black pepper, and paprika. Bring to a gentle simmer (4–5 minutes). Stir in Parmesan and pepper jack cheese and adjust seasoning with salt, pepper, and more jerk seasoning if desired. 5. Combine Add pasta to the sauce, tossing to coat. Add shrimp back in, mixing gently. Use pasta water if sauce is too thick. Add mor Parmesan and pepper jack cheese if needed to thicken sauce. 6. Finish & Serve Plate pasta, and add extra Parmesan cheese if you like… serve hot and enjoy!
