Easy and Cheap Lentils Recipe that’s also vegan! Here’s a budget recipe for a lentil dish that’s super easy to make and is incredibly cost effective. This is going to be a part of a new series called 6 for $6 where I make a dish using only 6 ingredients, all for under $6. For the sake of ease I won’t count water, salt, or oil as a part of those 6 ingredients, but everything else is fair game! The quintessential budget, and easy recipe is beans and rice. However dried beans need to be soaked for hours and take 45 - 60 mins to cook afterwards. The reason why I like lentils is because they’re similarly cheap, don’t require a soak, and cook in 15 - 20 mins!
