This is one recipe I get asked about CONSTANTLY, and I can't even be mad about it hahaha These muffins are a staple in the Mace house for so many reasons. I like to use oat flour which makes them gluten free, you can sub out the refined sugar for maple syrup or honey, but even then there's only 1/2 cup of sugar in the WHOLE RECIPE. There's added protein and healthy fats, as well as fibre from the oats and hidden flax. it's also almost vegan, with the exception of 1 egg. You could use a sub for that, too. I haven't tried it yet, as I'm not sure how the texture will turn out, but definitely an option! Essentially it's a decent breakfast on the go! Or dessert! Or snack, or anything in between lol! What you'll need: DRY INGREDIENTS 2 cups flour (I use oat flour) 1/2 cup of sugar (or sub - it does change the consistency a bit, so be mindful of that) 1/4 cup hemp hearts 1 tablespoon flaxseed meal 1 & 1/2 tsp baking powder 1 tsp baking soda 1/2 tsp salt WET INGREDIENTS 2-3 bananas 1/3 cup oil (I use coconut) 1 egg OPTIONAL chocolate chips and blueberries go insanely well INSTRUCTIONS Mix together all dry ingredients and set them to the side. Blend or mash all the wet ingredients. Add the wet to the dry and mix Bake in a muffin tin for 15-17 minutes at 375! That's IT!!! Seriously so easy and so delicious!! If you try these, tag me!
