And while our Sensarte nonstick set has served us well, we’re trying to move away from pans with synthetic coatings. Carbon steel has been the answer. We’ve been testing two carbon steel pans: the 8-inch GSI Outdoors and the 10-inch OXO. We also have the Merten & Storck pan we use at home, but it stays out of the van since the handle can’t be removed. These pans give us the cooking performance of cast iron but are much lighter, naturally nonstick when seasoned, and more efficient with power.
