Brands seen in unboxing: Pixi https://bit.ly/3cAm2nM Cult Beauty https://bit.ly/33Y2I00 Saie Clean Makeup https://bit.ly/307OFnx __________________________ Creamy Pumpkin Soup 1 small-med sized pumpkin Optional: 1/2 butternut squash (depending on size of pumpkin, use more or less / or none if the pumpkin is big enough) 1 can coconut milk 1-2 cups water (depending on desired consistency) 1 onion 4 pcs of garlic 1 tbsp veggie stock Dash of cinnamon Salt & pepper to taste Directions: 1. Preheat oven at 220’C / 425’F. Rinse pumpkin and butternut squash, slice into large chunks. Bake in oven for about 40 mins, or until fork tender 2. Once ready, scoop out pumpkin from skin, set aside. I leave the skin on the butternut squash as it’s soft and tender when baked. 3. In a large pot, sauté onion and garlic in either water or coconut oil until translucent 4. Add in pumpkin, butternut squash, coconut milk, water, veggie stock, cinnamon and salt + pepper 5. Using an immersion blender, blend until creamy (again you can add more or less water depending on desired consistency) 6. Serve Immersion blender - https://amzn.to/3hBU6RN Cilantro Cashew Dressing Handful of fresh basil, parsley or cilantro Juice of 1 lemon 1/4 cup cashews 1/4 cup water 1-2 cloves of fresh garlic Pink sea salt and pepper to taste Directions: 1.
