In this video, I share how to make my famous fluffy pancakes using a secret ingredient, ricotta cheese. Ingredients: 1 cup of All-Purpose Flour(l use King Arthur) 3/4 cups of milk - If the batter seems too thick, add a tsp of milk at a time until you have consistency you like. 1 large egg 2 heaping tbsp of whole milk ricotta 1/8 cup of sugar 2 tsp of baking powder 1/2 tsp of table salt 1 tsp of vanilla extract Directions: In a mixing bowl, combine the ingredients for the pancakes. To achieve a pancake with a crispy edge, generously oil a cast iron skillet and allow it to come up to temperature. To test your temperature, use a small sample of the pancake batter and make a miniature pancake. Once you have verified that the skillet and oil are not too hot, fry the rest of your pancakes. The pancakes are ready to flip once the pancakes begin to bubble on top and the edge is set. Flip the pancakes away from you to avoid splattering yourself with hot oi. Allow the pancakes to finish browning. The pancakes can be stored in a warm oven on a wire rack until you are ready to serve them. While warm, top the pancakes with butter and your favorite syrup.
