Tasty isn't it? At least that's what I think. That flavour. For lovers of whisky, it seems to be the main driver for the pursuit of new experiences in malt - that amazing cornucopia of aromas, tastes and feelings to be found in each glass. You may remember an anecdote I share sometimes about a moment I was introducing a curious but skeptical guest to malts through some small pours. He was examining a glass with a blank gaze, then asked "this is all very interesting, but I just smell whisky! What is it, exactly, that you smell and taste when you enjoy whisky?" With very little hesitation I replied "Everything". Of course, that sounds ridiculous and while I remember the incredulous chuckle of that night, I did go on to justify it. It got silly as we scrolled through all the potential possibilities; quickly moving on from foodstuffs to chemicals, anything remotely organic, minerals, metals and all kinds of anything else. I explained that even if I hadn't found it in a glass of whisky there's a good chance someone has. That's fascinating. And so, this week's vPub will move us a little down that exploratory road and, as we chase the next flavour discovery, ask a simple question - where is it all coming from? Is it the barley? Perhaps how it's processed and handled? Is it, such as the recent Loch Lomond 12 The Open chardonnay Yeast release, the fermentation vessel and choices? Maybe the magic of distillation with its specific and varied cut-points and condensation? Perhaps it's down to a fortunate cask? We all know, in truth, it's a little of all of those things. So let's take a few sips of something and as we discover flashes and flickers of whatever we can - and let's try to determine how that comes about; at what point in the process has that particular characteristic been imparted? Of course, this is a little too lofty for me to try to get through by myself, so I offered it out to someone with a little more insight. I'll be joined this week by Alex Bruce of Ardnamurchan and Adelphi. With an impassioned background in cask selection, independent bottling and, more recently, making and releasing their own whisky, he probably has a fair idea of where these flavours may come from. Let's also touch upon what flavours he's chasing in his own whisky. Although his first release has been and (immediately) gone, so we can't buy it. Still, let's find out when he's going to sort that too. Would love to welcome you there!
