Flavours of Malvan, just for you! Know the nitty-gritties of preparing this flavoursome dish. MALVANI CHICKEN Ingredient 750 grams chicken, cut into 2 inch pieces on the bone 1 tbsp ginger-garlic-fresh coriander paste ¼ tsp turmeric powder Salt to taste 3 tbsp oil ½ inch ginger pieces, sliced 2-3 garlic cloves 2 medium onions, sliced ½ cup grated dried coconut 2 bay leaves 1 large onion, finely chopped 1 tbsp red chilli powder Salt to taste Fresh coriander sprig for garnish Kombdi vade to serve Salad to serve Method 1. Combine together chicken, ginger-garlic-fresh coriander paste, turmeric powder, salt in a bowl and set aside for 30 minutes. 2. Heat 1 tbsp oil in kadai, add ginger pieces, garlic cloves, onion and sauté till golden brown. Transfer them on a plate and allow to cool slightly. 3. In the same kadai¸ add coconut and sauté till golden brown, transfer on a plate and allow to cool slightly. 4. In a blender jar, add the onion mixture and coconut and add ¼ cup water. Blend to a fine paste. 5. Heat 1 tbsp oil in a deep pan, add bay leaves and onion and sauté till translucent. Add the marinated chicken pieces and sauté on high heat for 2-3 minutes. 6. Add reed chilli powder and mix well. Add the prepared paste, mix and pour 1½ cups water and stir. 7. Add salt, mix, cover and cook for 10-15 minutes. Switch the heat off and transfer into a serving bowl. 8. Garnish with coriander sprig and serve hot with kombdivade and salad.
