Lots of love Lozza xXx SALMON WITH SAUCE VIERGE (Makes 6 meals) ❤❤❤ INGREDIENTS ❤❤❤ ❤ Chilli powder (optional) ❤ 1kg red and green peppers (cut into strips) ❤ 2kg tomatoes (preferably skinned and deseeded) ❤ 20g chives ❤ Big bunch of basil ❤ Big bunch of parsley ❤ Juice of 1 small lemon ❤ 100 ml olive oil ❤ 3 handful of almonds ❤ 3 to 5 handfuls of sultanas depending how sweet you like it ❤ Spinach Leaves to serve with the dish ❤ 1.5kg salmon fillets ❤❤❤ METHOD ❤❤❤ 1. Heat up oven to 230C or 450F 2. Roast peppers (with olive oil spray) in oven for 15 – 20 mins 3. Add olive oil to pan on medium heat 4. Add tomatoes, roasted peppers, chives and lemon juice, 1 tsp garlic, 1 tsp cumin powder, salt and pepper 5. Taste and add more seasoning or garlic if needed 6. Add parsley, sultanas, almonds and basil leaves – SAUCE DONE 7. A salt to skin of salmon and then pan fry in olive oil on medium heat for 5 or 6 mins on each side. 8.
