Just nuts, seeds, dates for natural sweetness, a touch of maple syrup, egg white, and zesty lime. Recipe for cooking and ingredients: • Peanuts — ⅕ cup (20 g) • Almonds — ⅕ cup (20 g) • Hazelnuts — ⅕ cup (20 g) • Walnuts — ⅕ cup (20 g) • Sesame seeds — ⅕ cup (20 g) • Pumpkin seeds — ⅕ cup (20 g) • Sunflower seeds — 1 handful (≈20–25 g) • Rolled oats — ¼ cup (30 g) • Dried cranberries (rinsed) — ⅕ cup (20 g) • Dates (rinsed, pitted) — ⅓ cup (60 g) • Maple syrup — 3 tablespoons (≈45 ml) • Egg white (from 1 egg) — 1 • Ground cinnamon — ½ teaspoon • Dried ginger — ½ teaspoon • Salt — to taste • Zest of 1 lime For bonus healthy tea: • Lemon slices — 2 • Green tea — 2 tablespoons • Dried cranberries — 1 handful • Boiling water — as needed Instructions: 1. Lightly toast in a dry pan: ⅕ cup peanuts (20 g), almonds (20 g), hazelnuts (20 g), walnuts (20 g), sesame seeds (20 g), and pumpkin seeds (20 g). 2. Roughly chop all the nuts and seeds (or pulse lightly). 3. Add ¼ cup oats (30 g), handful of sunflower seeds, ½ tsp cinnamon, ½ tsp dried ginger, salt to taste, and ⅕ cup dried cranberries (20 g). 4. Pit and chop ⅓ cup dates (60 g) into pieces, then add to the mix. 5. Pour in 3 tbsp maple syrup. 6. Separate the egg white from the yolk (use only the white), add it, and mix everything well. 7. Grate the zest of 1 lime and stir it in. Mix thoroughly — you'll get a thick, fragrant mixture. 8. Line a baking sheet with parchment paper and lightly grease it. Spoon portions to form cookies (flatten slightly if needed). 9. Bake in a preheated oven at 350°F (180°C) for 12–15 minutes, until edges are golden. 10. Let them cool completely on a rack — they'll crisp up as they cool!
