Raspberry and White Chocolate Cake 🍰 Ingredients For the Sponge: • 3 large eggs (weigh them in their shells – mine were approx. 180g) • Equal weight of: • Unsalted butter, softened • Caster sugar • Self-raising flour • 1 tsp baking powder • 1 tsp vanilla extract • 1–2 tbsp milk (as needed for consistency) • 100g fresh raspberries • 75g white chocolate, chopped For the Frosting: • 150g cream cheese (i used mascarpone) • 100ml double cream • 50g white chocolate, melted and cooled slightly • 3–4 tbsp icing sugar (to taste) For the Raspberry Coulis: • 1 punnet raspberries (approx. 125g) • 2 tbsp caster sugar For the Biscuit Crumb: • 5 digestive biscuits • 2 tbsp melted butter 📝 Method 1. Make the Sponge: 1. Preheat your oven to 170°C (fan). Grease and line two 6-inch cake tins (or one 8-inch tin). 2. Cream together the butter and sugar until pale and fluffy. 3. Beat in the eggs one at a time, adding a little flour if it begins to curdle. 4. Mix in vanilla extract. 5. Sift in the flour and baking powder, folding gently to combine. Add milk to loosen if needed. 6. Fold in the raspberries and chopped white chocolate. 7. Divide the mixture between tins and bake for 25–30 minutes (or 35–40 for a single tin), until golden and springy. 8. Cool completely before frosting. 2. Prepare the Frosting: 1. Beat the cream cheese until smooth. 2. Add in the double cream and whip 3. Add the melted white chocolate and icing sugar and whip until slightly firm. Chill until needed. 3. Make the Raspberry Coulis: 1. Add raspberries and sugar to a small saucepan. 2. Cook on low heat for 5–7 minutes until the raspberries break down. 3. Mash or blend for a smoother texture. Cool completely. 4. Make the Biscuit Crumb: 1. Crush the biscuits into fine crumbs. 2. Mix with melted butter until sandy in texture. To Assemble: 1. Spread frosting between the cooled cake layers and on top. 2. Drizzle the raspberry coulis over the top and let it gently drip down the sides. 3.
