Recipe below! AD. Since I can remember, I’ve always viewed the world through a pastry lens. It might sound a bit whimsical or ridiculous, but it’s true — my life as a pastry chef has shaped the way I see everything, from the folds of an antique linen to the curves of an old Parisian doorway. Inspiration finds me in textures, shapes, and the quiet elegance of things that have lived a life before. A few months ago, a kindred connection began between @theparismarket and me — a shared love for Parisian flea markets, vintage treasures, and the timeless romance of pastry. Across an ocean, we found common ground in our reverence for craft, nostalgia, and old-world beauty, and it felt only natural to create something together. @fallenaristocrat, the jewelry line dreamt up by Paula Danyluk of @theparismarket, is a tribute to longing, wanderlust, and a world slightly out of time — all things that speak deeply to me. The piece I wore, their classic stick chain necklace with the glass cameo and songbird charm, is delicate, storied, and endlessly wearable — much like the things I search for on quiet Paris mornings. This collaboration is a love letter to vintage Paris, slow beauty, and the small, meaningful rituals that shape our days. I’m so grateful to share it with you. I have also linked similar vintage plates, bowls, and aprons that I have that you can purchase online! *recipe in pinned comment! * Berry & Frangipane Galette -Dough 175 grams flour 15 grams sugar Pinch of salt 110 grams of cold butter cut in small cubes 40-50 ml of very cold iced water One egg or yolk for the egg wash -Combine the flour and butter with the salt and sugar. Rub through your hands to till you have incorporated the butter, but there are still pea sized crumbs. Add water tbsp by tbsp till the dough just forms together. Pat into a round disk, cover with plastic, and place in fridge for at least 30 minutes. Then roll out on a well floured surface into about a 12 inch/30cm round (can leave with rough edges or cut into a perfect circle. Place in fridge while making filling. Frangipane 50 grams of each - room temp butter, almond flour, and sugar One egg - room temp and should be 50 grams Pinch of salt and a bit of vanilla and almond extract Splash of rum (optional) -Whisk together the butter with the flour and sugar. Then add the egg and rest of ingredients. Then spoon this mixture onto the dough. Add your fresh fruit of choice on top to cover. Fold over the dough, egg wash, then sprinkle with sliced almonds and raw sugar (optional). You can make ahead and put the galette at this point in fridge for 1 -2 days, covered in fridge. Bake in a preheated oven at 190C for 35-40 minutes until it is golden browned and fruit it bubbling. Let cool then dust with icing sugar. Please don’t repost full recipes.
