Here's a breakdown of the recipe: Ingredients: *For the dough 2 cups All purpose flour / maida 1/2 Suji/ Rava 1l4 cup Powdered sugar 1/4 up Ghee For the Filling: 400 gms Mava (khoya) 1/2 cup powdered sugar 1/4 cup almonds 1/4 cup cashews 1/4 cup dessicated coconut 2 tbsp choronji 1. Preparing the Dough: Combine all-purpose flour ,suji , powdered sugar and ghee in a bowl. Rub the ghee into the flour until it resembles breadcrumbs. Gradually add water and knead to form a stiff dough. Cover the dough with damp cloth and let it rest for about 15-30 minutes. 2. Making the Filling: In a pan add ghee Roast almonds and cashew Remove the almonds and cashew Crumble or grate the mava. Roast the mava in a pan over medium-low heat, stirring continuously, until it turns light brown. Now add powdered sugar, chopped dried fruits , raisins chironji and dessicated coconut . Mix the filling thoroughly. Transfer the mava mixture to the plate and let it cool 3. Shaping the Gujiyas: Divide the dough into small balls. Roll out each ball into a small, circular shape. Place a spoonful of the mava filling in the center of the circle. And apply water with your finger on the edge of the circle. Fold the circle in half to form a semi-circle. Seal the edges tightly, either by pressing with your fingers or using a gujiya mold. You can create decorative edges by twisting or pinching the sealed edges. 4. Frying the Gujiyas: Heat oil or ghee in a deep pan over medium heat. Carefully drop the gujiyas into the hot oil. Fry until golden brown on both sides. Remove the gujiyas and drain them on paper towels. Important Tips: Mava Roasting: Be careful not to over-roast the mava, as it can become Hard Sealing: Seal the gujiya edges well to prevent the filling from leaking during frying. Frying Temperature: Maintain a medium heat while frying to ensure the gujiyas cook evenly.
