I’ve enjoyed using my KettlePizza for many things other than pizza. I’ve used it to cook fish, vegetables, burgers even jalapeño poppers. However, up until now I’ve been unsuccessful at cooking an entire spatchcocked chicken in it. Even though, the surface of the skin burned, the chicken came out fantastic. The KettlePizza is designed to achieve very hot temperatures for cooking pizza. The challenge to cooking a chicken is to manage to keep the temps down to about 350°F. At one point during this cook it got to 400°F combined with the sugar in the rub the skin burned a bit, but underneath the chicken was delicious.
