ભરેલી મેથીયા કેરીનું ગુજરાતી અથાણું - मेथी आम का अचार | Bhareli Methia Keri Nu Athanu ===== Friends, Today's recipe is of stuffed methiya Keri (ભરેલી આખી મેથીયા કેરી નું અથાણું) Pickles are special recipes, as it requires perfect time management, extreme cleanliness & hygiene and perfectly measured amounts of ingredients. Today’s recipe is an age-old recipe of my grandmother. I replicated method she used to make this pickle. So, here is recipe. 500 grams desi raw mangoes Wash these mangoes properly. Make 3/4th cut in each mango. Remove mango gutli (seed) using knife. Now mix 3 tbsp turmeric powder and 5 tbsp salt. Stuff this mix into each mango cavity. Rest these stuffed mangoes for 8-10 hours. Better it is kept in rest overnight. Now, wash 100 grams dry fenugreek (methi) seeds. Soak fenugreek seeds for 4 hours. After 8-10 hours, all mangoes are found to be dried and it is learnt that, it has exerted salty yellow water into utensil. Spread these mangoes on dry cotton cloth inside room to let it dry further. Add salty yellow water exerted from mangoes to soaked fenugreek seeds (Fenugreek seeds soaked for four hours). Mix well. Let it soak in salty water further for 2 hours. After 2 hours, spread salty water-soaked fenugreek seeds on a dry cotton cloth inside room for further drying at room temperature. Now for making pickle spicy masala we will take 75 grams split fenugreek seeds (Methi Kuriya) and split mustard seeds (Rai Kuriya). Crush each one in mixer for 20-30 seconds. It should be coarse crushed and not to be crushed into fine powder form. Mix both these crushed seeds and add 3/4th tbsp turmeric powder and half tbsp asafoetida. Now, Heat 300 grams of oil at low/medium flame till bubbles are formed in oil. For Gujarati pickle, cottonseeds oil / corn oil / sunflower oil are recommended types of oils. Please refrain to use peanut oil for making pickle. Add 100 grams of hot oil on mix fenugreek-mustard crushed seeds. Crushed seeds, turmeric and asafoetida gets sautéed due to hot oil. Now, fenugreek seeds are dried after an hour on cotton cloth. Add this fenugreek seeds on crushed sautéed mix of crushed fenugreek-mustard seeds mix. Add 4 tbsp salt and red chili powder. Mix well. Here in this recipe, I have added additional 3 tbsp red chili powder and 1 tbsp salt and 50 grams hot oil for extra spiciness. Spicy pickle masala is ready. Now, mangoes are dried on cotton cloth in three hours. After three hours, fill cavities of each mangoes with spicy pickle masala. Storing stuffed mangoes pickle: Glass jar which can be tightly covered is to be washed properly and to be dried under direct sunlight for 4 hours before taking it in use to fill pickle. Make a layer of spicy pickle masala at the bottom of glass jar. Now, stack mangoes stuffed with pickle masala on this layer. Fill spicy pickle masala in gapes. Again, stack stuffed mangoes and fill masala in gapes. Fill entire glass jar is such a way. Now, take remaining 150 grams oil which is now cooled down 150 grams oil and fill the glass jar slowly around the stuffed pickle masala and stuffed mangoes. Keep pressing masala and mangoes lightly with a spoon and keep adding oil over it. Now, shut the lid of the glass jar.
