Around The World In 80 Cakes - German Bienenstich aka Bee Sting Cake Small Disclaimer: this is most definitely my own personal take on the cake. Not traditional, not authentic but it is inspired by the German classic. Why? Well because this was my third bloody attempt at trying to get it just right and I couldn’t bear to try out another recipe online which may or may not have been good. It was a real goldilocks sorta situation: the first time was too dry, the second time was too soggy and flat and this one? Well this one came out just right 🥰 The thing I love about this series is how I am learning so much about something I thought I already knew lots about. I’m learning new techniques, new types of sponges, new ways of doing things, ways to make a sponge better - the lot. So when it comes to a recipe which doesnt quite hit the mark, I now feel like I kinda have an extensive catalogue of knowledge to pull upon to make it go from meh to drool worthy. The base of the cake reminded me of the Danish Brunsviger so I treated the base pretty much the same - I dimpled the dough and doubled the sugary topping and came out with something pretty damn delicious. There was no chance that I was reliving my Slovenian Kremna Rezina nightmare of an unset custard so I stabilized it with a bit of double cream for a more of a Creme Legere filling. Both tweaks worked and happy days because I wasn’t here for a 4th try. She’s a bit of effort and a little complex but aren’t we all??
