Jasper Cooks Ossobuco on the Big Green Egg. The Big Green Egg is so versatile and the Carbon Steel Wok is a great accessory for the Big Green Egg, you can see how easy it is to use. This dish was incredible!! Ossobuco Ingredients: Veal Osso Buco (Veal Shank), sliced into 5 pieces and seasoned with salt and black pepper. Egg Set up for Indirect Cooking 150-160°C for 1hr 30mins, followed by 5-10mins of direct searing for the nice sizzle finish. Ingredients used: Few Splashes of Avocado Oil in the Wok followed by: Chopped Celery, Tomatoes, Onions and Carrots 4 cloves of garlic whole, 1 tin of (Mutti Polpa) finely chopped tomatoes Red Wine (preferably Italian) Beef Stock, with Veal Shank drippings from indirect cooking Herbs - Thyme, Rosemary and Oregano Mash Potatoes Ingredients: Potatoes Double Cream Whole Milk Season with Salt and Pepper Finished with a Gremolata and chimichurri mix. Chopped Parsely, Oregano, Garlic, Chilli Grated lemon zest and extra virgin Olive Oil, Red wine vinegar, salt and pepper.
