Join us for a behind-the-scenes tour of Sturgeon AquaFarms, America’s premier sturgeon aquaculture facility, and see how we exclusively produce the finest purebred Beluga (Huso Huso) caviar in the U.S. Founded in 2001 by Marky’s owners Mark Zaslavsky and Mark Gelman, SAF was created to protect endangered sturgeon species and reduce pressure on wild populations through sustainable aquaculture. After years of permitting and the successful import of Beluga, Sevruga, and Osetra broodstock from Europe, the team established a state-of-the-art facility in Florida’s Panhandle, powered by pristine, drinking-grade freshwater from the Upper Floridan Aquifer. Since then, SAF has raised more than 80,000 sturgeon, spawned generations of Beluga exceeding what was believed to remain in the Caspian Sea, and continued vital conservation work despite challenges like Hurricane Michael. As the only U.S. holders of these critically endangered species, Marky’s and SAF have donated over 160,000 fertilized Beluga eggs to aid restoration efforts—while also pioneering a domestic market for their sustainably produced caviar and meat.
