Add Mascarpone cheese to the cooled yolks, beat everything well. 4) Whisk the proteins with sugar and salt, until strong peaks. 5) Gradually add the whipped whites to the cream. 6) Put a little cream on the bottom of the mold and distribute it evenly over the mold. 7) Pour the cooled coffee into a bowl and add the liqueur. Dip each Savoyardi stick in coffee and put it in a mold. Put the cream on top of the Savoyardi layer and distribute evenly. Put a second layer of coffee-soaked cookies on top of the cream. Filling: hazelnuts - 70g bitter chocolate - 70g 1) Preheat the oven to 170 °C. 2) In a large bowl, melt the butter with the bitter chocolate in a water bath. Remove from heat and add sugar, vanilla sugar and eggs, mix everything well.Put aside. 3) In a small bowl, mix together flour, cocoa powder, baking powder and salt. Add the dry ingredients to the chocolate mixture, mix everything well until smooth. 4) Cut the hazelnuts and bitter chocolate into small pieces and add to the dough.
