Full recipes below #plantbased #weightloss #beginners PLANT BASED CHK'N NUGGETS WITH DIPPING SAUCE 16 oz super firm tofu 1/2 cup dill pickle juice 2 T maple syrup 1 tsp garlic powder 1 tsp onion powder 1 tsp smoked paprika 1 tsp poultry spice 1/ cup to 3/4 cup nutritional yeast Instructions Press tofu for 15 minutes to remove excess water In a large mixing bowl, combine all of the coating ingredients and stir to combine. If the mixture is too thin, add more nutritional yeast. If the mixture is too thick, add water a little at a time. Break the tofu into bite-sized chunks over the bowl. Lightly fold the chunks into the coating, being careful not to break the tofu too much. Lay out your tofu chunks on a lined baking sheet in a single layer. Place in a preheated oven on air fry or convection setting@ 400 degrees for 20-25 minutes. If you don't have these settings on your oven then bake @ 400 degrees for 30-35 minutes until golden brown and crispy. MAPLE BBQ MUSTARD DIPPING SAUCE 2 T barbecue sauce 1 T tsp yellow mustard 1 T =+ 1/2 T Dijon mustard 2 T maple syrup 2 tsp lemon juice ¼ tsp sea salt 2 T water more if you want it thinner Add all the ingredients to a bowl and whisk until completely blended ROASTED RED PEPPER SOUP 1 CARROT CHOPPED 1 CELERY STALK CHOPPED ½ ONION CHOPPED 2 SMALL POTATOES CHOPPED 1 NOT CHICKEN BOUILLON 1 CAN RINSED AND DRAINED CHICKPEAS 1 T TOMATO PASTE 4 TO 5 CUPS WATER 1 TSP. EACH ONION POWDER, GARLIC SALT, POULTRY SEASONING ¼ CUP RED LENTILS ½ OF A 16 OUNCES JAR ROASTED RED PEPPER PACKED IN WATER 1-2 CUPS CHOPPED KALE OR SPINACH 1-2 T LEMON JUICE ADD 2 T WATER TO A LARGE POT. ON MEDIUM HEAT ADD THE ONIONS, CARROTS, AND CELERY TO POT AND COOK FOR 5 MINUTES. NEXT ADD THE TOMATO PASTE AND SPICES AND STIR TO COMBINE. ADD A BIT OF WATER TO HELP WITH THAT. NEXT ADD IN THE 4-TO 5 CUPS WATER WITH THE BOUILLON CUBE. NEXT BLEND THE ROASTED RED PEPPERS WITH AT LEAST A CUP OF THE WATER FROM THE JAR, THEN ADD TO POT WITH THE POTATOES, CHICKPEAS AND RED LENTILS. BRING TO A BOIL AND LET SIMMER FOR 15 MINUTES OR UNTIL POTATOES ARE FORK TENDER. THEN TURN OFF THE HEAT AND TAKE TO LADLE FULLS OF THE SOUP AND BLEND AND THEN ADD BACK INTO THE POT. ADD THE KALE AND LEMON JUICE AND STIR WELL, COVER AND LET SIT FOR 5 MINUTES UNTIL THE KALE WILTS A BIT. YOU ADD RED PEPPER FLAKES WHEN YOU SERVE THE SOUP BUT THIS IS OPTIONAL.
