After a few hours, the yogurt thickens, and the cracker thins and softens into a cheesecake-like texture. Base Recipe (Each Jar) 1 cup (225 grams) plain Greek yogurt (2% or whole preferred) 8 crackers (20 grams) Simple Mills Cracker Thins (Cinnamon, Chocolate or Lemon) Method (Same for All Flavors) Mix all flavor ingredients into the yogurt until smooth. Push crackers into the yogurt. Transfer to a jar or container. Chill for 2–4 hours (or overnight) until thickened. Lemon Yogurt Cheesecake Cup • 1 cup (225g) Greek yogurt • 8 (20g) Lemon Cracker Thins • 1 teaspoon fresh lemon juice • 1 teaspoon (2 g) lemon zest • 1/2 teaspoon honey (or maple syrup, stevia, etc) Tiramisu Yogurt Cheesecake Cup • 1 cup (225g) Greek yogurt • 8 (20g) Chocolate Cracker Thins 1 tablespoon cooled espresso or strong coffee 1/2 teaspoon cocoa powder (and extra to sprinkle over the top) • 1/2 teaspoon honey (or maple syrup, stevia, etc) Peanut Butter Banana Yogurt Cheesecake Cup • 1 cup (225g) Greek yogurt • 8 (20g) Cinnamon Cracker Thins 60 g very ripe banana, mashed smooth (1/2 a medium banana) 1 tablespoon peanut butter (extra to drizzle over the top) 1/2 teaspoon honey (or maple syrup, stevia, etc) Sprinkle of cinnamon (optional) Chocolate Yogurt Cheesecake Cup • 1 cup (225g) Greek yogurt • 8 (20g) Chocolate Cracker Thins 2 teaspoons (10g) unsweetened cocoa powder 1/2 teaspoon honey (or maple syrup, stevia, etc) (Optional topping: melt a few chocolate chips and drizzle over top before serving!)
