Three Cup Chicken is one of the most classic Taiwanese dishes. It uses very basic every day ingredients but it is packed with flavour. Why is it called Three Cup Chicken? Because there are 3 different types of sauces in this dish! Originally, the recipe calls for a cup of soy sauce, sesame oil and sugar. However, I've modified it over the years to make a healthier version. This dish is incredibly delicious because it involves evaporating the sauce to intensify the flavours. By allowing the chicken to cook in the sauce, the chicken becomes really tender and juicy while the sauce becomes nice and thick. Absolutely perfect with rice. -- Ingredients: ginger & garlic (薑和大蒜) 2 lbs chicken legs (mix of drumstick, thigh, leg quarter, ham) (2 磅雞腿 ) or 1 whole chicken 1/4 cup light soy sauce (1/4 杯生抽 ) 1/8 cup dark soy sauce (1/8 杯老抽 ) 1/4 cup sweet dark soy sauce (1/4 杯ABC甜酱油) 1/4 cup sesame oil (1/4 杯麻油) 1/2 cup water (1/2 杯水) 2 tbsp brown sugar (2 tbsp 紅糖) white & black pepper (白胡椒粉和黑胡椒粉) basil (九層塔) Instructions: 1. To get the crispy golden brown texture when stir-frying, peel the skin on the ginger and cut into very thin slices. 2. Crush, peel and chop off the ends of the garlic. 3. On low to medium heat, add oil into a preheated wok. The wok must be hot before adding the ginger. Once the ginger is close to turning golden brown, add the garlic. Cook until golden brown and place to the side. 4. On medium heat, add the chicken into the wok. You can use all parts of the chicken but this dish tends to be tastier using the legs. You can place a lid to speed the cooking process but remember to stir every so often to prevent sticking. 5. Once the chicken is nearly cooked or completely cooked, take it out and drain the excess oil. 6. In a clean wok, add all the liquid ingredients and bring to a boil on high heat. Add in the garlic, ginger and chicken. Add in brown sugar for extra glaze. 7. Keep mixing until the sauce has been reduced. (If you prefer the dish to be saucier, decrease the reduction time) 8. Once there is little sauce in the wok, add in the basil. You can add as much as you like. Turn down the heat at this point and mix until everything is coated.
