Although most people think of this fish as a trash fish and think it has a strange taste, If you prepare it correctly it actually tastes very similar to Yellowfin Tuna. On this trip, we had two epic days of Tuna, Yellowtail, and Bonita fishing at San Clemente Island. We shot out of Catalina Island, both days with an easy 45-minute drive to San Clemente on the Stoked On Fishing Charters 35-foot Everglades center console. After catching both Yellowfin Tuna and Bonita we thought it would be fun to do a Catch, Clean, Cook video on the two so that we can show people that the so-called trash fish actually tastes good. When handling Bonito -Bleed the fish immediately. -Ice Immediately. Never let it sit in the sun. -Do not smash the fish. The meat will turn mushy. Keep it on the top of the ice. -Eat within 3 days. Bonita does not freeze well. This trip was part of a donation to the Catalina Island Medical Center Foundation to raise money and help build Santa Catalina Island a new medical center.
