It's important to use a product such as Tung oil which is a drying oil, as opposed to non-drying oils which don't offer protection. If you missed any spots just touch those up. It may take anywhere from 3-5 layers to fully finish a wood countertop with Tung oil. As you're going, you'll be able to see dry spots as it's soaking in. And then just let that sit for about half an hour until its drawn into the wood, and continue feeding that oil in over a period of two hours or so. Once it's about 80% glossy, you can wipe off the surface to remove anything excess which hasn't been soaked up. Then wait overnight and do another application. Let it cure for 7 to 10 days and it'll be hardened. If you ever need to touch it up, you can just give it a light cleaning and apply another layer.
