This is Pedro Solari Delgado, famous for his ceviche, fresh fish cured in lemon (leche de tigre) . I met him in 2014 when he was still working in his restaurant in Lima, Peru. In memory of Pedro Solari Delgado (1922-2020). Two months ago a legendary maestro cevichero passed away. He was the inventor of modern ceviche. . When he was just twelve years old, his mother was running behind in preparing a lunch for guests, so he offered to make the ceviche. At that time ceviche was cured for hours. But the guests were already arriving, so Pedro threw together sole, lime juice, ají limo's (chillies), onions and salt, left it to marinate and served it five minutes later. Everyone was blown away and unintentionally he had invented modern ceviche. . For more than eight years, Pedro prepared each bowl of ceviche in his cevicheria in Lima. He was the teacher of many well-known chefs. His famous words: "Whoever hasn't eaten my food, is screwed." May Pedro rest in peace. This story (the written part and knowledge) is shared by Katinka Lansink Dodero from cevicheceviche.nl, who is like me Dutch-Peruvian, and also shares her passion for food and our Peruvian roots. I filmed him, in 2014 when I visited him and tried his famous ceviche. Now 6 years later we made this memory and Katinka prepared a 'ceviche clásico' inspired on his ingredients ad ritual to honour this legend.
