KILAWING SALMON @ATEJESKITCHENETTE / @atejeskitchenette KILAW- means raw or uncooked and KILAWIN means is to cook in vinegar. Normally a fish meat is CURED in a mixture of vinegar, lemon and calamansi, onions, ginger, and chilies, spring onions, salt and seasonings. You can use different sort of fish that have firm fleshy meat. If you’re making kinilaw, make sure… the fish has to be EXTREMELY FRESH! I NEVER wash the Salmon in water because it affects the flavour, rather wash it with VINEGAR and IMMEDIATELY strain it, My method is to COOK all the ingredients in vinegar and lemon or calamansi (except the fish) for 2-3 mInutes just to SOFTEN the textures and INFUSED the flavours. Then balanced the flavour with salt and a pinch of sugar to neutralised the acidity of the vinegar and lemons then add the mixture into the fish. Kilawin is SIMPLE and EASY dish to make. It’s an excellent starter to your meal. So, don’t be intimidated to try this recipe at home. 1kl Salmon- skinned and deboned 1/4 cup vinegar + for washing Salmon 5 pieces calamansi or 1 lemon 1 thumb ginger or more- minced 1 red onion minced 4 pieces green and red chili labuyo - cut into thin slices salt Pinch of sugar Spring onion Thank you for watching.
