Learning to live in the moment again after a few months of spiralling in my own head. I get affected by dull winter months and in late spring, some kind of awakening usually happens. I slow down again, get out of my head, find peace and quiet within. It's not good being so dependent on weather and seasons, but when life guides you this way, sometimes all you can do is just follow its path rather than try to resist it. Shop my art: www.dariamundi.com (new update coming soon!) 🍓 STRAWBERRY CAKE RECIPE: 600g fresh strawberries (use 1/3 for topping & the rest for filling) 140g brown sugar zest of 1/2 lemon Juice of 1 lemon 75g melted butter 40g olive oil 120g greek yoghurt (or sour cream) 3 eggs 285g flour (I used 1/3 wholewheat & the rest plain white flour) 1 tsp baking powder 1 tsp baking soda pinch of salt Slice 1/3 of your strawberries in half and chop the rest into small pieces. In a bowl combine sugar and lemon zest. Rub them together with your fingers to release fragrance from zest. Whisk in 3 eggs. Add melted butter (mine looked slightly thick and yellow on video because it stood outside and began to solidify), olive oil, lemon juice and yoghurt. Mix until combined. Sieve in plain flour and add wholewheat flour separately. I like to use a bit of wholewheat for flavour, you can also substitute it with almond flour. Add salt, baking powder and baking soda. Mix until combined but try to not overmix the batter! Add chopped strawberries. Pour batter into greased and lined 8"/20cm cake tin, place strawberry halves on top. Bake for 1 hour at 175C/ 347F The cake should come out quite moist and fluffy. It's good eaten warm or cold.
