🥣 Creamy Zucchini–Carrot Moong Dal Soup | Light, Comforting & Nourishing 📝 Ingredients • 1 tbsp yellow moong dal • Hot water (for soaking) For the soup base • 4 cups water • ½ cup zucchini (roughly chopped) • ½ cup carrot (roughly chopped) • 1 tomato • 1 clove garlic • 1 small piece ginger • 1 small piece onion • 1 green chilli • Few stems fresh coriander Whole spices • 1 black cardamom • 3–4 cloves • 4–5 whole black pepper • 1–2 bay leaves • 1 tsp salt For tempering • 1 small cube butter • 2 tbsp finely chopped onion • ½ tsp paprika Finishing • ½ tsp brown sugar • Black pepper (to sprinkle) • Cooking cream (to drizzle) • Fresh herbs (for garnish) • Lemon slice • Garlic bread (to serve) 👩🍳 Method 1. Add 1 tbsp yellow moong dal to a bowl, wash well and soak in hot water for 10 minutes. 2. In a saucepan, add 4 cups water, soaked dal, zucchini, carrot, tomato, garlic, ginger, onion, green chilli, and coriander stems. 3. Add whole spices: black cardamom, cloves, black pepper, bay leaves, and salt. 4. Mix well and cook on medium-high flame until it comes to a boil. 5. Cover and cook on low flame for 15–20 minutes, till everything is soft. 6. Switch off the flame. Remove black cardamom and bay leaves. 7. Blend using a hand blender to a smooth, creamy texture. 8. Place the soup back on low flame. 🔥 Tempering 9. Heat a pan, add butter and chopped onion. Sauté till golden brown. 10. Add paprika, mix, and pour this tempering into the soup. 11. Stir well and cook gently till everything blends perfectly. 12. Add ½ tsp brown sugar for balance. 🍽️ Serving 13. Pour into a bowl, sprinkle black pepper, drizzle cooking cream, garnish with fresh herbs. 14. Serve hot with lemon slice & garlic bread.
