These taste a lot like snickers bars. Just like any candy bar, they are very sweet and should be cut into small pieces. Snickers Bar cupcakes: • Snickers Bar Candy Cupcakes Home made vanilla extract: • How to make your own vanilla extract From Taste of Home magazine: I have been using a lot of taste of home recipes lately, partly because my neighbour whow was moving away gave me a huge box full of them and I spent a few happy hours going through them and clipping recipes! Bottom layer (layer #1) 1 cup (189g) chocolate chips (I used semi-sweet, but the original recipe calls for milk chocolate, this would be closer to the actual Snickers bars) 1/4 cup (51g) butterscotch chips 1/4 cup (65g) creamy peanut butter Place these ingredients in a small saucepan over medium heat and stir until melted and smooth. Pour into the bottom of a 9x13" baking dish (lined with parchment or greased foil). Refrigerate until firm. Nougat layer (layer #2) 1/4 cup (56g) butter or margarine 1 cup (215g) white granulated sugar 1/4 cup (60ml) evaporated milk or cream 1 1/2 cups (213 g or a 7.5 oz jar) marshmallow creme or fluff 1/4 cup (65g) peanut butter 1 tsp (5ml) vanilla extract 1 1/2 cups (144 g) coarsely chopped salted peanuts Place the butter, sugar and milk (or cream) into a medium saucepan on medium high heat. Stir and cook and cook until it starts to boil. Continue to boil and stir for an aditional 5 minutes. Remove from the heat and immediately (and carefully) stir in the peanut butter, vanilla extract and marshmallow creme. Stir in chopped peanuts. This mixture will set fairly quickly, so I suggest you only prepare this layer once your bottom chocolate layer has set. Spread over the bottom layer and refrigerate until set. Caramel layer (layer #3) 14 oz (approx. 400g) caramels 1/4 cup (60ml) whipping cream Place the caramels and cream in a small saucepan over low heat and stir until melted and smooth. Pour melted caramel over the nougat layer. Refrigerate until set. Top Layer (Layer #4) 1 cup (189g) chocolate chips (milk chocolate called for by original recipe, I used semi-sweet) 1/4 cup (51g) butterscotch chips 1/4 cup (65g) creamy peanut butter Melt the chocolate chips, butterscotch chips and peanut butter over low heat in a small saucepan and pour and spread over the caramel layer and refrigerate the entire thing for at least an hour. Cut into 1 inch squares. Note** Original recipe states that this should be stored in the refrigerator, but I stored mine at room temperature because of the issues I had with the caramel being too hard to cut.
