Welcome to our life in the Japanese countryside. Today is Setsubun (Feb 3rd), the day we welcome Spring. Instead of buying "Lucky Sushi Rolls" at the shop, we decided to make our own outside. It’s messy, it’s fun, and it’s exactly why we moved here—to live a simple life and enjoy food made with heart. [The Ingredients] If you want to try this at home, here is everything we used for our "Flavor Circus" Ehomaki: The Wrap: Large sheets of Nori (Dried Seaweed) The Rice: Sushi-meshi (Short-grain rice seasoned with vinegar and sugar) The Fillings: Tamagoyaki: Eggs seasoned with soy sauce and sugar Sausages: Sliced thin and pan-fried Pork: Stir-fried with the "Big Four" (soy sauce, vinegar, sesame oil, honey) Boiled Spinach: Seasoned with the same "Big Four" mix "Tuna" Paste: Avocado mashed with soy sauce Shiso Leaves: Fresh Japanese basil for a herbal kick Kanpyo: Dried gourd strips (rehydrated and seasoned) The "Big Four Seasonings" (My go-to combo): Soy Sauce Vinegar Sesame Oil Honey (or Sugar) Note: I used this specific mix for the pork, the spinach dressing, [Instructions] Prep all your fillings and slice them thin. Season your hot rice and let it cool slightly. Place Nori on your bamboo mat (or baking sheet!). Spread rice, stack your fillings, and give it one firm squeeze on the first roll. Eat in silence while facing this year's lucky direction!
