Dr. Jourdain, your friendly plant based ER physician makes Haiti's famously delicious diri ak djon djon, also known as Haitian black rice. Ingredients: Dried Black Mushrooms (djon djon) (be ware of grit in your mushroom you can quickly rinse it it in cold water to clean it) 2 - 4 cups Garlic cloves 6 (crushed) Grapeseed oil 1/2 cup Red onion 1/2 (chopped) Green onion 4 (chopped) Shallot 1 (chopped or crushed) (optional) Jasmine rice 3 cups (rinse the starch off) Water 6 cups Salt 2 teaspoons Green peas or lima beans (frozen) 3 cups Thyme 4 sprigs (may add sage and parsley as in the video) Vegan chick'n bouillon (Edward & Sons, Not-Chick'n, Bouillon Cubes) 1 cube Scotch bonnet pepper (whole - don't open it!) 1 Directions: Step 1: Develop the broth by adding water to pot and adding the djon djon mushrooms and let it cook on low heat for 15-20 minutes. Step 2: In a separate pot heat about half off your oil on medium high. When it's hot sautΓ© about half of your crushed garlic, chopped red onions and green onions for 1-2 minutes. Then add your green peas or lima beans and cook briefly ~ 4 more minutes. Set the green pea (lima bean) mix aside. Step 3: In the same pot add the rest of the oil and sautΓ© the rest of the red onion, green onions, garlic, optional shallot, and herbs for about 1-2 minutes and turn off the heat to let it cool. Then add the strained mushroom broth as seen in the video. Now add the salt and bullon cube and bring the broth to a boil. Step 4: Add the rice to the boiling broth and cook uncovered until the broth evaporates down until it is just to the surface of the rice. Then cover with a lid and turn heat down to simmer and allow to cook for about 15-18 minutes longer. Turn the heat off. Let it sit covered for another 5 minutes or so. Step 5: Add the green peas (lima beans) - a lot of times I'll transfer it all to a glass casserole dish and mix them together then. Now it's ready to serve! Bon appΓ©tit!
