I am so incredibly happy to be celebrating this special day with you all. Thank you for being here! 🎉 Seeing more and more of you enjoying my videos brings me the biggest joy and makes all of this so worthwhile. 🥳 In this new chapter of my life, my biggest hope is that we can continue to learn and grow together. Thank you for all your support! For this birthday vlog, I treated myself to a beautiful French fine dining experience. It was absolutely exquisite! And of course, no celebration is complete without something sweet, so I ended my night at home making some soft and adorable mochi desserts. 😋 It was the perfect cozy end to a perfect day. Homemade sweet Mochi 🍡 🧑🍳Ingredients: 1. Mochi Dough: · 59g butter · 120g milk · 10g sugar substitute · 60g glutinous rice flour · 10g cornstarch 2. Red Bean Filling: · 80g red beans (soaked overnight) · 240g water · 10g milk powder · 20g sugar substitute 3. Pancake Wrapper: · 1 egg · 30g pork floss (optional for savory note) · 80g red bean filling (prepared) · 120g milk · 15g sugar substitute · 3g baking powder · 80g low-gluten flour --- Steps: 1. Prepare the Red Bean Filling: · Cook soaked red beans with 240g water in a rice cooker until soft. · Mash the cooked red beans, then add milk powder and sugar substitute. · Cover with plastic wrap and set aside. 2. Make the Mochi Dough: · In a bowl, combine milk, sugar substitute, glutinous rice flour, and cornstarch. Stir until smooth. · Microwave on high for 3 minutes (or steam until cooked). · Add butter while hot and let it melt. · Once cool enough to handle, put on PVC gloves and repeatedly stretch the dough until smooth and elastic. 3. Prepare the Pancake Wrapper: · Mix all pancake ingredients (egg, pork floss, red bean filling, milk, sugar substitute, baking powder, low-gluten flour) in a bowl until well combined. · Heat a non-stick pan over medium-low heat. Pour a small spoonful of batter to form a thin pancake. · Cook until large bubbles appear on the surface, then flip and cook for another 10 seconds. 4. Assemble: · Dust the mochi dough with cooked flour (to prevent sticking) and divide into small portions. · Flatten each mochi portion and wrap a spoonful of red bean filling inside. · For a creative touch, use food coloring to draw patterns on the mochi. · Place the filled mochi on the pancake wrapper and enjoy!
