If so, click here • Appalachian and Mountain Recipes Ingredients 1 cup of sifted stone ground cornmeal 1/4 cup (1/2 stick) of butter, room temperature 1 cup boiling water 3 eggs, separated 1 1/2 teaspoon of salt 1 tablespoon of baking powder 1 3/4 cup of milk Instructions 1. Preheat oven to 375 degrees. 2. Oil 9 inch cast iron skillet and put it in the oven. (If no skillet, a 2 qt baking dish will do.) 3. Boil 1 cup of water. 4. Sift in 1 cup of stone ground cornmeal and add butter into a heat-proof mixing bowl. 5. Gradually pour in the boiling water. 6. Wisk the mixture while pouring in the water. Then stir with a spoon. 7. Beat together egg yolks, salt, baking powder, and milk in a separate bowl. 8. Add the mixture to the cornmeal paste, mixing first with a spoon, and then a whisk. Whisk until smooth. Let sit for 20 minutes for the cornmeal to absorb the milk. 9. Preheat skillet. 10. Place egg whites into a large, high-sided non-plastic bowl. Beat them until stiff. Gently fold into the batter. 11. Transfer the batter into the preheated cast iron skillet. 12. Bake for 35 minutes, until butter knife inserted comes out mostly clean. 13. Serve hot with butter. Thanks for watching!
