These lemon bars have a shortbread crust, a creamy cheesecake layer and topped with a luscious lemon layer. Print the recipe here: https://www.yourhomebasedmom.com/wprm... Crust Ingredients: 3 Tbsp butter, salted and chilled 1/2 cup all purpose flour 2 Tbsp light brown sugar, packed pinch of salt Cheesecake Layer Ingredients: 2 oz. cream cheese, softened 2 Tbsp granulated sugar 1 Tbsp beaten egg 1/2 Tbsp milk 1/4 Tbsp lemon juice 1/4 tsp vanilla extract Lemon Layer Ingredients: 1 egg 1/4 cup plus 2 Tbsp granulated sugar 3 Tbsp lemon juice 1 1/2 Tbsp flour Directions: Shortbread Layer: In a bowl combine ingredients and mix together with a fork or pastry blender until crumbly. Press mixture into a parchment paper lined 9 x 5 inch loaf pan. Bake at 325 degrees F for 12 minutes or until just starting to turn light brown around the edges. Cheesecake Layer: In a bowl combine all ingredients and mix with an electric hand mixer until smooth. Pour over hot crust and return to oven for 14-15 minutes, until cheeecake layer is set. In a bowl combine all ingredients for lemon layer. Pour gently over cream cheese layer and return to oven. Turn oven down to 300 degrees F. and bake for 24-30 minutes or until lightly brown around edges. Cool and chill. Sprinkle with powdered sugar after set up.
