Ingredients: For the shrimp: 8–10 medium shrimps, cleaned and deveined Salt & pepper, to taste 1 lime (zest + juice) 3 large garlic cloves, minced 1–2 tsp oil for frying For the rice paper crisps: 1-2 rice paper sheets (cut into quarters) Oil for frying For the sauce: ½ tsp tomato ketchup 1 tbsp mayonnaise ¼ tsp chilli sauce For assembling: 1 ripe avocado, thinly sliced Fresh dill, for garnish 1. I start with about 8–10 shrimps, season with salt, pepper, lime zest, lime juice, and 3 minced garlic cloves. Let it sit for a few minutes. 2. In a shallow pan, fry the shrimps for about 2 minutes on each side until pink and lightly golden. 3. Cut rice paper sheets into quarters (like pizza slices) and fry them until puffed and crisp. 4. For the sauce, I use my husband’s mix — ½ tsp tomato ketchup, 1 tbsp mayonnaise, and ¼ tsp chilli sauce. 5. Slice one ripe avocado thinly. 6.
