This is a delicious and very nutritious soup using the vegetable kale. We all need to get some more kale in our diets and this is a great way. INGREDIENTS 1 bunch kale, cut into strips 1 pound red potatoes, cubed 8 cups water 1 onion, diced 4 cloves garlic 4 stems fresh thyme 1 stem fresh rosemary 1 bay leaf 2 tablespoons olive oil 1/2 teaspoon smoked paprika 1/2 teaspoon salt (to taste) INSTRUCTIONS 1 Remove the stems from your kale and cut the leaves into strips. Set aside for later. 2 Sauté the onions with the olive oil until translucent, then add the garlic and stir for about thirty seconds. 3 Add the potatoes, water, smoked paprika, and salt and stir. Then set the rosemary, thyme, and the bay leaf on top of the water. 4 Bring the water to a boil and let everything simmer for about 20 minutes. 5 At this point, remove the rosemary, thyme, and bay leaf from the soup. Then add the chopped kale into the soup and cook for 10 minutes more. Enjoy.
