Creamy Egg Pie ✔️Dough 2 cups all purpose flour (270g) 1 tbsp sugar (13g) 1/4 tsp salt (1g) 1/2 cup cold butter (unsalted) (115g) 5 tbsp cold water (75ml) ✔️Custard Filling 1 egg (large) (yolk & white separated) 3 whole eggs (large) 1 tsp vanilla extract (5ml) 1 can condensed milk (300ml) 1 can evaporated milk (370ml) 1 cup all purpose cream (240g) [or heavy cream / whipping cream instead] Procedure: 1. In a mixing bowl, combine the flour, sugar, salt and cold butter (cut into dice/cubes). Mix together by hand until it’s crumbly. Gradually add in the cold water. Knead until just combined and dough forms. Shape the dough into a ball, wrap in plastic then refrigerate for at least 30 mins. 2. On a floured counter, roll out the refrigerated dough that will fit into a 9 or 10 inch round baking pan. Place the rolled out dough and press evenly into the bottom and sides of the baking pan. Refrigerate while preparing the filling. 3. In a mixing bowl, combine the egg yolk, whole eggs, vanilla, cream, evaporated and condensed milk. Stir until just smooth. Strain the mixture twice into another bowl for smoother custard. 4. 5. Whip / whisk the egg white until soft peaks form. Fold into the custard mixture until just combined. Pour mixture into the prepared pie crust. 6. Bake in a pre-heated oven @ 180°C for 60 to 80 mins. (❗️Baking time may vary on the depth of the pie / pan and on the type of oven, so alter accordingly). Check doneness when pie has browned top, edges are firm & set while the center still has a slight jiggle. 7. Let the pie cool completely. Refrigerate for at least 4 hours or until overnight before serving. Looking for more recipes?
