CHAMORRO ROSKETTI COOKIES/ TASTE Of GUAM 🇬🇺 2022 HAFA ADAI Rosketti Cookies , are Chamorros traditional cookies. A melt in your mouth cookie. They crumble easily because of the large amount of corn starch. *INGREDIENTS: 1 cup sugar 2 Large eggs /3 eggs Medium 2 stick butter/margarine (softened) I teaspoon vanilla extract I teaspoon coconut extract (optional) 1 box corn starch (1lb.) 1 cup flour 1 teaspoon baking powder In a bowl add butter. Then add sugar. Mix together until creamy. Add eggs. Stir in the vanilla extract and coconut extract. Mix well. Then set aside. In a separate bowl, combine the cornstarch, flour, baking powder, and salt and sieve. Add all the dry ingredients to the butter mixture in the bowl until smooth. Line a baking sheet with parchment paper. Divide dough. Traditional way: Form a long rope then wrap it around itself like a coil. Or for an easy shape, make a ball and press with a fork. Preheat oven to 350 degrees and bake for 20-25 minutes ENJOY! In memory of: “Mrs. Josefina Pangelinan” She first introduced me to Rosketti cookies.
