VIETNAMESE CHICKEN CURRY (Cà Ri Gà) RECIPE Yields about 7-8 servings Chicken Marinade: 4lbs of chicken (thigh, wings, drumsticks, breast meat, etc) we are using thighs and drum sticks -4 tbsp fish sauce -2 tbsp of sugar -1 tbsp of Quoc Viet chicken stock or any brand of chicken bouillon -3 tbsp Quoc Viet curry stock -3 tbsp Thai Red curry paste chilli oil, to taste 1 cup (total) ground garlic, ginger, lemongrass to the total of -1 sweet onion -1 shallot Broth: 1 can of coconut milk 2 cans=24oz coconut water or cocorico or sprite (use the other two options first, sprite as last resort) 3 to 4 cups of water or enough to cover the veggies about 4lbs of veggies (peeled and chopped) that you like: sweet potato, potato, taro root , carrots, even eggplant or okra Dipping sauce: sambal black pepper salt lime 1. Add all the ingredients under “marinade” together. Rubbing, mixing to make sure that every piece is evenly marinated 2. Set the meat aside and let it sit for at least 30 mins 3. Wash, peel and chop all of your veggies 4. Preheat air fryer, small or standard oven to 400 degrees. Once preheated, put the chicken into the air fryer — make sure to reserve the leftover marinade to use in the broth 5. set a timer for 20 minutes while remembering to check on it. Half way through (10 mins) turn the chicken 6. Once the chicken is browned remove the chicken from the air fryer and set aside 7. In a pot add in all the vegetables, add the leftover marinade to the vegetables and give it a good mix 8. Add in 2 cans of coco Rico 9. Move the pot over the the stove and turn the stove on medium high 10. Add 3-4 cups of water (until the vegetables are covered) 11. Cover the pot until the water comes to a boil 12. Add in browned chicken 13. A can of coconut milk 14. Simmer for 30 minutes or until the vegetables are tender 15. Taste the broth and add in any sugar, fish sauce or seasonings to your liking 16. Turn off the stove 17. Once to serve, garnish with green onion and cilantro 18. This meal pairs well with Vietnamese baguette (put into air fryer on 400 for 2 mins), vermicelli noodles or rice 19.
