Ingredients Brinjal / Baingan - 1 No. Oil To Make Masala Mix Gram Flour - 2 Tbsp Turmeric Powder - 1/2 Tsp Kashmiri Chilli Powder - 2 Tsp Coriander Powder - 2 Tsp Cumin Powder - 1 1/2 Tsp Amchur Powder - 2 Tsp Garam Masala - 1 Tsp Hing / Asafoetida Salt - 1 Tsp Prep Time: 5 mins Cook Time: 15 mins Servings: 4 Method: 1. Take besan, turmeric powder, red chilli powder, coriander powder, cumin powder, amchur powder, garam masala powder, hing and salt in a bowl. 2. Mix them all well. Keep the masala aside. 3. Wash and clean the brinjals. 4. Cut the brinjals into slices with medium thickness. 5. Coat each slice with masala on both sides. Rest the coated brinjal slices for at least 5 mins. 6. Heat a pan and pour some oil. 7. Spread it all over the pan. 8. Place the masala coated brinjal slices on the pan and brush some oil on the upper surface of all the slices. 9. Cook them for 5 mins and flip them all to the other side. 10. Apply some oil around the sides and cook the brinjals on the other side too for 5 mins. 11. Once the brinjal slices are nicely roasted, take them off the pan and garnish with finely chopped coriander leaves. 12. Tasty Brinjal Tawa Fry is ready to be served hot as it is or with sambar rice/rasam rice/curd rice by the side. Brinjal tawa fry is a nice side dish recipe made with brinjals. For this recipe, brinjals are marinated with the basic Indian spice powders and then fried on a hot skillet with oil. This can be had as it s or you can also enjoy this fry with any main meal of your choice like plain rice/sambar rice/rasam rice etc. It is important to note that this recipe requires only the big brinjals (aubergine/egg plant) and not the native Indian small size brinjals.
