The day my husband took Daisy, our Holstein cow, to the auction barn, I did a deep clean and reorganization of the cheese cave in celebration of all the milk she provided for us over the last fourteen months. The cheeses in this video are only a fraction of the cheeses I've made from Daisy's milk. (A small fraction of the milk was also from Emma, our Jersey, and a wee bit came from a neighboring farm). Along with all the hard cheeses -- over 100 wheels -- there were also gallons of yogurt, soft cheeses like ricotta, mozzarella, mascarpone, paneer, and haloumi, as well as lots of ice cream, butter, and sour cream. Here's a little math: if Daisy gave us 2-3 gallons of milk once a day for 14 months (and she raised a calf, too), that's well over 1000 gallons of milk. At $7 a gallon (the current rate for raw milk), that's $7000 worth of milk. Not too shabby, Daisy!
