Any food that you connect with a nice memory? For me this is the gâteau basque aka the original cake from the basque country and not the basque burnt cheesecake (those are two different cakes). This cake reminds me of my granny on a day when I ended up as an 8 years old sipping wine. Despite her anger she let me eat what until now was the best slice of cake I ever eaten. I tried to reproduce a recipe which is delicious but it doesn't come close to my granny's cake. But here it is anyway 🍰🍰 Ingredients For the pastry: 300 g flour 200 g butter 3 egg yolks + 1 whole egg 150 g sugar 1 tbsp baking powder For the cream filling: 70 g sugar 50 g flour or cornstarch 3 egg yolks + 1 whole egg 50 cl milk 1 vanilla pod 1. The pastry Mix butter and sugar until creamy. Add the eggs and whisk well. Add flour and baking powder, then knead by hand until smooth and homogeneous. Wrap in foil and chill in the fridge. 2. The cream filling Heat milk with the vanilla pod until it just simmers. In a bowl, whisk sugar with the eggs, then add flour/cornstarch and mix. Remove the vanilla pod, pour the hot milk into the mixture while whisking. Return everything to the pot and cook over medium heat until it thickens. 3. Assembly Roll out ⅔ of the pastry and line a buttered and floured tart dish. Pour in the cream, and swirl in a little jam if you like. Roll out the remaining ⅓ of pastry, place it on top, and seal. Brush with egg yolk, then decorate the top using the back of a fork.
