This is a simple recipe for lamb with vegetables of traditional Georgian cuisine. There are many options for canakhi. Basically, it's a lamb or veal stew. It is baked in clay pots, or stewed in a Dutch oven over the fire. Chanakhi according to my recipe is easy to prepare and it turns out to be incredibly tasty. So, for chanaha I need :: 500 gr. lamb pulp 300 gr. ribs 2 onions 2 eggplants 2 sweet peppers 10 small tomatoes 1 carrot 6 potatoes 1 chili pepper 6 cloves of garlic 2 tsp hops-suneli greens salt pepper Cut the eggplants into large pieces and grind them with salt to release the bitterness. Chop all vegetables coarsely. Fry its meat over high heat until golden brown. Transfer to a saucepan. Salt, add pepper and hop-suneli and stir. Now fry all the vegetables in the same pan. Bow first. Fry until golden brown and transfer to the meat. Then the carrots. Cut the potatoes into 4 pieces. Fry and add to the meat. Sprinkle with salt and seasoning on top. Do not stir the layers. Rinse the eggplants and squeeze out the water. Fry. Transfer to a saucepan. Chill with pepper and hop-suneli. Now the bell peppers. Take two colors. It turns out to be a very bright dish. It is better to take small tomatoes, cut them into 2 parts. They go with the final layer. Just lay them on top. Chop the chili and sprinkle over the tomatoes. Add all the spices. Pour a glass of hot water and let it simmer for about 1.5-2 hours. It all depends on the meat. Chop the garlic and herbs finely. Add to saucepan. Cover and simmer for another 15 minutes. The lamb is ready. It turned out to be very juicy and aromatic. Place in a plate, garnish with herbs and serve immediately!
