This dish brings back memories of childhood and family for me. Its one of my favorite dishes to prepare and eat hehe. In our family, this dish is almost always paired with some form of soup filled with lots of veggies (i.e spinach, bitter melon, wax gourd, etc). Served with hot steamed rice and you got yourself a warm hearty meal to be shared with loved ones. If anyone wants to try, I provide the recipe below. Hope you enjoy this recipe as much as I have sharing it! Full recipe: Ingredients: 2lb catfish (cut into 2” slices) 1/3 cup chopped scallions 1/3 cup minced shallots 3 tbsp hanh phi 1 cup coconut water 3 tbsp brown sugar 1/4 cup fish sauce 1 tbsp soy sauce Instructions: 1. Prepare hanh phi by frying shallot slices until golden brown. Remove from heat and set aside to cool before using in the marinade. 2. Marinate catfish by mixing in minced shallots, fish sauce, black pepper and hanh phi. Cover and refrigerate for at least 30min. *The longer you marinate, the better! 3. In a large pan (or a wok if you are fortune to own one), heat up vegetable oil. Add brown sugar (2 tbsp) and stir until caramelized. *Watch carefully not to burn the sugar, otherwise it’ll become bitter. 4. Once caramelized, add catfish and place them evenly on pan. Cook for a few minutes while flipping the fish occasionally. Add 1 cup of coconut water, soy sauce and Thai chili peppers. Simmer until sauce is reduced to a thick consistency. 5. Once sauce is thickened, sprinkle chopped scallions and remove from heat immediately. 6. Serve with steamed rice and enjoy!
