Heat oil in a pan. Add mustard seeds — let them splutter. Then add cumin seeds, curry leaves, and green chilies. 2. Add onion and sauté until it turns golden brown. 3. Add ginger-garlic paste and sauté till raw smell disappears. 4. Add tomatoes and cook until they turn soft and mushy (5–7 minutes). You can cover the pan to help them cook faster. 5. Add spices: turmeric, red chili, coriander powder, and salt. Cook until oil starts to separate from the masala. 6. Add water and simmer for 5 minutes. (Add coconut milk or coconut paste at this stage for a creamy texture.) 7.
