In recent years, the old Chinese restaurant with an eye-catching neon sign on Kingston’s Broadway has experienced something of a renaissance. There was a cameo in the Apple TV series “Severance.” The lively new Instagram account run by the owner’s daughter. The swag that sells out in minutes. The long-awaited reopening after years of pandemic-induced takeout-only operations. All have fostered a wave of enthusiasm for Eng’s — the first Chinese restaurant in Ulster County, founded in 1927. At the heart of this local institution is Tom Sit, the restaurant’s indefatigable owner, whose life itself is the stuff of legend. Born in Guangzhou, China, in 1943, Sit fled the political upheaval of China’s Cultural Revolution as a young man, risking his life swimming to Hong Kong before immigrating to the United States in 1974. He arrived with little money and limited English. With little more than a dream for a better life, he headed north from New York City and found his way to Kingston, where he quickly became an integral part of Eng’s kitchen. Two years later, Sit and his wife, Faye, took over the restaurant from Paul Eng, the founder’s son. They have been running it since. But his days have never ended when the kitchen closed. For decades, Sit has devoted his early mornings and spare hours to an unlikely second passion: competitive pigeon racing. From a coop behind his home, he has bred, trained and raced homing pigeons across the Northeast, forging a reputation in a tight-knit, niche sport that prizes patience, discipline and deep intuition — qualities Sit has in spades. This short documentary, produced for the Times Union by Marist University’s Documentary Production Course, explores the intertwined worlds of Tom Sit: a refugee who built a future through food, a restaurateur whose business became a cornerstone of Kingston, and a pigeon racer whose quiet passion reveals another dimension of a man devoted, above all, to the things he loves. © 2025 Nathan DiNome, Cora Flynn, Amelia Sardi.
