Easy Cauliflower Steak with Chimichurri | Vegan & Impressive Recipe (serves 2) Ingredients (for 2 servings): Cauliflower head - 1 piece For the chimichurri sauce: Fresh parsley - a large bunch (50g) Fresh cilantro - a large bunch (50g) Fresh dill - a large bunch (50g) (I used frozen) Olive oil - 30-50ml (to taste) Salt/Pepper - to taste Red chili flakes - a pinch (decoration) OR chili pepper. Preparation: 1. Prepare the cauliflower: remove the outer leaves, wash thoroughly. Place the cauliflower stem-side down and cut it into 1.5–2 cm thick “steaks” from the center. You’ll get 2–3 large steaks; the remaining florets can be roasted separately as a side. Season: Brush both sides of each steak with olive oil, salt a bit. 2. Make the chimichurri: While the cauliflower is roasting, chop the parsley, cilantro, and dill. Blender everything adding olive oil, salt, pepper and lemon juice. Serve: Place the roasted cauliflower steaks on plates and generously drizzle with chimichurri sauce. Serve immediately. Decorate with chili pepper.
