World speciality porridge champion, Caroline Velik, tells us about her porridge jaffles 🇦🇺🥣 🏆

Australian food stylist, Caroline Velik, tells us about her porridge jaffles which won her the ‘speciality porridge’ category at the 2025 Golden Spurtle World Porridge Making championship which took place in the village of Carrbridge in the Scottish Highlands on Saturday 4 October. Hamlyns of Scotland are proud sponsors of the event. Jaffles are an Australian toasted sandwich. Caroline made home-made yoghurt flatbread which was filled with a mixture of porridge, Caroline‘s mum’s rum soaked bananas made with Bundaberg banana toffee rum, and other native Australian ingredients, including Davidson plum sugar and wattleseed.
